Veg Masala Dosa

Masala Dosa in South India usually means Potato Filling in the normal dosa.
I don’t know why but somewhere Potato is not a favourite now a days. Yes I do use it, but very less in quantity.

This masala dosa is rich because it has all the vegetables.

It contains a additional chutney which gives this dosa a very nice taste.




Ingredients:
1. Dosa Batter           As required

Masala :

1. Vegetables             1 cup(carrot, beans, green peas, potato)
2. Onion                 1
3. Turmeric Powder        a pinch
4. Curry Leaves            few
5. Salt

Chutney
1. Small Onion(preferred)        5-6 no( Normal Onion - 1)
2. Garlic Pods                  4-5
3. Red Chili                    5
4. Tamarind                   a small piece
5. Jeera                       1 tsp
6. Ginger                      small piece






Grind them into a fine paste.

Method:
 1. Boil the vegetables and mash them with your hands. Then in a pan add oil , curry leaves and boiled vegetables with turmeric powder and salt.
Mix well.



2. Now pour the batter on the dosa pan. Flip it on the other side. Once it turns golden brown spread the chutney and then add a full spoon of the veg masala.







3. Serve it with chutney of your choice.




Gobi Manchurian (Dry)

I think this is the most loved starter for all of us. If you need to make a quick starter or a snack for your guest, this would be a great choice.





Here is the recipe:

Ingredients:
1. Gobi/ Cauliflower            1 (medium)
2. Maida                     4 tbsp
3. Cornflour                   2 tbsp
4. Red Chili Powder             1 tsp
5. Black Pepper powder         1/4 tsp+ 1/4 tsp
6. Curd                       1/4 cup
7. Green Chili                  2
8. Spring Onion                1/4 cup
9. Tomato Puree               1 (small tomato pureed)
10. Soya Sauce                 1/2 - 1 tbsp
11. Turmeric Powder            a pinch
12. Ginger & Garlic Paste         1 tsp
13. Curry leaves
14. oil


 Method:
1. Boil Cauliflower/Gobi in a pressure cooker with turmeric powder and salt for 2 whistles.


2. Once it is cool down completely, Drain the water completely.

3. In a bowl add maida, cornflour, red chili powder, black pepper, curd and ginger garlic paste.


4. Add salt and water to form the batter. It should not be too thick nor runny. (Like dosa batter).


5. In a kadai add oil once hot, dip these florets in the batter and fry them until golden brown.

6. Take them on absorbent paper so that the extra oil is absorbed.

7. Then in a pan add 1 tsp oil, add spring onion with green part, curry leaves, green chilies.

8. Saute it nicely then add tomato puree, soya sauce, black pepper powder and salt. Mix nicely.


9. Finely add the florets and toss nicely.



Serve Hot….




Crisp Corn and Palak lollipops

This stater is very healthy and tasty too…
We know spinach is rich in Iron . Kids are fussy when it comes to food. Including spinach this way will not only be tastier but healthy as well.
This is very easy and quick to make.



Ingredients:





1. Sweet Corn           1cup
2. Palak              1/2cup
3. Onion                1
4. Green Chili            1-2
5. Cheese               1/4 cup
6. Maida+Cornflour batter  1/2cup
7. Bread Crumbs          as required
8. Lemon Juice            2 drops
9. Wheat flour/Maida      2tbsp(for binding)


Method:
1. Boil sweet corn until soft. Cool them completely and then grind them roughly.







2. Finely chop palak. Then in a bowl mix sweet corn, palak, onion, green chill, cheese, lemon juice and salt.
3. Finally add 2 tbsp maida /wheat flour and form a dough. It will little sticky. No worries just roll them into small balls.






4. Take oil in a kadai to fry these balls.
5. Mean while dip these balls in the maida+cornflour batter and roll them on bread crumbs.
6. When the oil is really hot fry these balls until golden brown.






They are crisp outside and very soft from inside.

Hot Chocolate Sauce

Ingredients:
1. Compound Chocolate                     small piece
2. Powdered Sugar                              1 tsp
3. Milk                                                 1/4 cup
4. Fresh Cream                                     1 tbsp
5. Butter                                                1/4 tsp

Method:
1. Take the milk in a pan ...




2. Then add chocolate and mix well


3. Then add butter and powdered sugar


4. Finally add Cream , At a stage the sauce will turn thick .


All the step should be done in medium flame... Serve this Chocolate Sauce Hot with Brownie and Icecrean


Brownie dipped in Hot Chocolate Sauce

Wow… The name of the recipe itself is mouth-watering…
I had this brownie dipped in hot chocolate sauce , When we went to coimbatore…
I badly wanted to try this at home…
It is a very rich desert which you can make for your guests.
This desert can be made in advance and served when required.
The Hot Sauce gives a rich taste to your desert.




Ingredients:
1. Maida                1 cup
2. Powdered Sugar        1/2 cup
3. Melted Butter          1/2 cup
4. Thick Curd             1/4 cup+2 tbsp
5. Melted Chocolate       3-4tbsp
       (or)
Coco Powder              1/4 cup
6. Vanilla Essence           1/2 tsp
7. Baking Powder            1 tsp
8. Baking Powder            1/2tsp


Method:

Pre- heat the oven at 180c for 10 mins.

1. Take the melted butter in a bowl.

2. Add powdered sugar and vanilla essence, Beat once.




3. Add in curd and mix well.



4. Sieve Maida, Baking Powder, Baking Soda.
Add the above ingredient into the butter mixture.


5. Fold in nicely and finally add the melted chocolate or coco powder…




6. Grease a tray with butter and dust maida. Add in the batter and tap the tray so that it is evenly spread.


7. Bake it for 20-25mins at 180c . Check in between so that the top does not burn.







Assembling all the ingredients together…
1. Brownie
2. Chocolate Sauce
3. Ice- Cream ( flavour as required)

Place the brownie in a plate. Then pour in the hot chocolate sauce…. Finally place the ice-cream on top…

Almond Cookies in Chocolate Basket

Cookies are all time favourite . They are very easy to make. And when you make them for your kids you really feel happy. You are aware of the ingredients going in, and can change the dry fruits as per your choice.




The Chocolate Basket gives a very beautiful look to these cute little Cookies…


Ingredients:
1. Maida                      1 cup
2. Melted Butter               1/2 cup
3. Powdered Sugar              1/2 cup
4. Warm Milk                  1/4 cup
5. Almond and Dry Coconut       4 tbsp
6. Vanilla Essence                1/4 tsp

Method:

Pre- heat the oven at 180C for 10 mins…

1. Take melted Butter in a bowl and add powdered sugar. Just Mix it using a spoon.








2. Then add in Vanilla Essence and Maida, Just give a quick mix.




3. Add Almond and Dry Coconut mix it nicely and make a soft dough using milk.





4. Use milk as required . I used less than 1/4 cup milk. Please see to it , the dough is not sticky.
5. If it turns to be sticky, Just sprinkle some maida.
6. Keep the dough in refrigerator for 15 mins.
7. Then make small balls and place them on greased tray.Place the tray in the pre-heated oven for 20-25mins at 180C .


Almond Cookies ready… Place these biscuits in the chocolate basket and sprinkle some powdered sugar over them.

Gift them for someone special or make them for your kids to enjoy….
